I am really amazed by ChatGPT. And I know you can't say open ebay to it yet. But there is lot of talk that it will replace Google at some point. How will SEO work then?

It will not replace Google.
But lets postulate that it did. Well, first there would be no SEO since there would be no search engines to optimize. However, content would still be king because the GPT models would still need to train on x% of the internet every y years. This update would effectively be the same as Google spidering.
TLDR; ChatGPT would be the death knell of search engines but not the death of content.
Why do you say y years? Why couldn't it crawl for new data continuously? Is there a fear of it becoming evil like Microsoft Tay bot?
Only because it takes so many resources to complete a GPT indexing. If you check then you'll observe that the last indexing ended sometime in 2021. What do you think?
