Great post! You kind of missed one chain in the evolutionary chart: static/JAMstack publishing for Open Source CMSs. They're not exactly headless, since the content management is still coupled (which has many advantages for the end user), but the output is completely static. One example of this type of service is Strattic (I'm the CEO).
