Build a typing speed tester. Shows skills in reactivity, array manipulation, local storage
Build a D&D character builder. Shows local storage, deeply nested objects, data store management
Build a sports ladder manager (divisions of 6 people, top two get promoted, bottom two get relegated). Shows local and remote storage, form inputs and validation, complex calculations, move objects around in a nested hierarchy.

If you are a front end developer interested in going more full stack, you should do something more computationally complex. Building something like a tournament bracket, a graph editor (nodes & edges), or anything with JS canvas will help you flush out some basic math skills which are more common on the back end.
