Why are you choosing to go with Google Sheets? I would much rather integrate this with Notion's APIs. It seems to be a way better experience using their SDKs and also to handle the data itself if you aren't building a dashboard or have a BaaS (Backend as a service) GUI to help you with that. I did a similar side-project using Notion as a database, check it out here.
