When you join a team that already has a big project that you need to work in fullstack, what do you pick first? The backend and then the frontend? The frontend and then the backend? What tips can you also give?

When I join a new team normally I try to resolve general bugs and meet the business of the company or software I'll go to work.
Resolve bugs help to understand structure, framework and project patterns you will to work.
knowledge of Business, help to understand what part of software you can help more "for instance the last job you worked so much with API" can be a better strategy you focus on more on backend instead of frontend.
