I haven't tried anything like this, but I'm sure a cron job / bash script/ raspistill solution would be pretty quick to assemble. In fact, I may do a time-lapse experiment just for fun!

Wondering how this could be used with OctoPi for nice high-res time lapse of 3D prints.. will have to check out how their camera integration works!
