Now that you bring it up, very rarely in mock interviews are people trying to interview to discern information about the company (to be fair, the interviewer likely doesn't have this prepared anyway). I think it would make a great mock interview where the interviewee practices trying to find out what kind of company they are going to be working for.

This is underated advice. As much as the employer is interviewing you . It also your time to interview them as well!
