I did a similar rundown for an 11ty site of Webpack, Rollup, Parcel 1 and 2, and esbuild a few months ago.
The surprising best setup for me was going back to gulp! Using gulp with gulp-esbuild produced blazing fast builds but with added flexibility included with gulp and a massive plugin ecosystem.
